SUPA MEGA GREEN PANCAKE RECIPE  (By Chef Lauren Von Der Pool)

Don’t let "St. Patrick" be the only reason you celebrate the color green (The color is so much bigger than him). The color green stimulates your pituitary gland, which is the center of your imagination and intuition. Your blood histamine levels increases and your muscles become more relaxed. Green is calming, stress-relieving and also invigorating. Green is a symbol for balance, nature, spring, and rebirth. We associate green with vitality, fresh growth, and wealth. Green are one one of the main things that the biggest strongest animals in nature consume. Those same greens can be be found in these delicious pancakes. All of the pleasure with none of the guilt (or the gluten). Think of it as a healthy green smoothie, in the form of a stack of pancakes. Here's the recipe... Go make you some. :-)

Ingredients/ Materials:

    • 1/4 cup of almond milk

    • 1 medium banana (100 grams)

    • 2 large eggs

    • 3/4 cup of flour

    • 1/2 teaspoon ground cinnamon

      1/2 teaspoon kosher salt

    • 3 tablespoons of SupaMegaGreens

    • 1 teaspoon baking soda

    • coconut oil (or your choice for greasing)

    • 3-4 strawberries (or your choice for toppings)

 

Directions:

    • Set out all your ingredients.

    • Place the banana into a medium sized bowl. Press banana until pureed. 

    • Combine the 4 dry ingredients  in a bowl. (Four, baking soda, cinnamon, kosher salt and your Supa Mega Greens) 

    • Add the almond milk and vegetable oil to your mixture.

    • Whisk until combined.

    • Set a stove element with a pan to medium heat.

    • Melt oil in a large sauce pan or griddle over medium heat. Add about 1¼ cup of batter to the pan, forming pancakes. Cook for 2-3 minutes, then flip over and cook for another 1 minute until fluffy and cooked through. Repeat with remaining batter.

    • Serve topped with sliced strawberries, or your choice of toppings.

 

Serving Size: 4 Pancakes.
